I came up with this when attempting to clone Dave's Killer 21 seed & grain bread. It turns out it doesn't taste the same, but I actually like it BETTER!
I know it's a long ingredient list, but it's really pretty easy!
I have included directions for the bread machine, but if you know how to make bread the old fashioned way already, you will know to proof the yeast and knead/punch/rise the dough properly and all that jazz. Here is the All Recipes link, which lists variations and more information. If you use this recipe, I would LOVE it if you reviewed it on that site!
INGREDIENTS:
• 2 1/4 Cups water • 2 TBS and 2 tsp oil • 2 TBS honey • 2 TBS molasses • 1-1/4 teaspoons salt • 1 Cup misc flour (I use dark rye flour, but any combination works fine) • 2 Cups whole wheat bread flour • 2 TBS buttermilk powder • 1 TBS unsweetened cocoa powder • 3 TBS vital wheat gluten • 2/3 Cup flax meal • 1/4 Cup (+1/8 C reserved) oats • 3 TBS (+1 TBS reserved) sunflower seeds • 3 TBS (+1 TBS reserved) pumpkin seeds • 2 TBS (+2 tsp reserved) sesame seeds • 1 TBS chia seeds • 2 TBS poppy seeds • 2 TBS cornmeal • 1TBS quinoa • 1 TBS millet • 2 TBS cracked wheat • 2 TBS wheat germ • 1 TBS amaranth Grain • 1 TBS bulger • 1 TBS hemp seeds • 2 teaspoons active dry yeast
DIRECTIONS:
Place all ingredients (except reserved seeds/oats) in the pan of the bread machine in the order recommended by the manufacturer. Select whole wheat cycle. Add the reserved items at last knead cycle.
