Ingredients:
3 pounds Bone in beef shank
2 tablespoons oil
12 oz onion, chopped or sliced
5 cups beef stock
0.5 pound carrots, chopped or sliced
3-4 stalks celery, chopped
1 1/2 cups red cabbage, chopped
1 pound fresh beets (about 4 cups), chopped or sliced (I prefer to include the beet greens!)
1 can stewed or diced tomatoes (or 1 cup tomato juice)
3 teaspoons lemon juice
3 teaspoons white sugar

Directions
• Brown meat & onion
• Add broth
• Bring to boil & simmer til meat is tender (about 2 hours - or 40 minutes in Instant Pot)
• Remove meat from pot & cool slightly
• Add remaining ingredients to broth & simmer
• Salt & pepper to taste
• While broth is simmering w/veg, cut/shred beef into bite sized chunks
• Return beef to pot and simmer, about 20 to 30 minutes, until veg is tender
• Serve with Sour Cream
• Yum yum!!
